Recipe - Peas Pudding

1 One half cup Split peas
1 tablespoon Fat back pork (finely minced )
1 tablespoon Butter
One half teaspoon Salt
One half teaspoon Pepper
Wash peas, mix in the fat back pork and place in a pudding bag. Tie bag,
allowing room for expansion of the peas and steam for 3 to 3 One half hours.
When cooked, remove from bag and mash well adding the butter, salt and
pepper.
