Recipe - Pear Vinegar

2 Coarsely chopped; ripe fresh
California Bartlett pears
3 tablespoon Fresh tarragon; chopped
12 ounce White wine vinegar

In my MicroCookbook 5.0, I found these four vinegar recipes which may give
you an idea on how to make raspberry vinegar. I have not tested any of
these. Source: California Tree Fruit Agreement.

Place all ingredients in nonmetallic container. Mash fruit while
stirring; cover tightly. Let stand 10 to 14 days. Strain.
