Recipe - Pear Chutney

10 cup Sliced, firm, ripe pears
(5 pounds)
One half cup Finely chopped green pepper
1 One half cup Seedless raisins
4 cup Sugar
1 cup Chopped crystallized ginger
3 cup Cider vinegar
One half teaspoon Salt
One half teaspoon Whole allspice
One half teaspoon Whole cloves
3 Cinnamon sticks each 2
Inches long
Place pears and the next 6 ingredients in a saucepan. Tie allspice and
cloves in a cloth bag and add along with cinnamon. Cook slowly until pears
are tender and mixture is thick, about 1 hour. Remove spices. Ladle into
hot, sterilized jars. Seal airtight. YIELD 8 jars, One half pint each. Posted
