Recipe - Peanut Sauce - Microwave

1 tablespoon Unsalted Butter
2 Minced Shallots
1 cup Chunky Peanut Butter
1 cup Water
6 tablespoon Fresh Lime Juice
1 tablespoon Minced Fresh Ginger
One half teaspoon Oriental Chili Sauce *
One fourth teaspoon Coconut Extract
2 tablespoon Oriental Sesame Oil
* Use oriental chili sauce with garlic.

Microwave butter and shallots in a medium microwave safe bowl, covered with
plastic wrap, on high power for 1 minute or until butter is melted. Stir in
remaining ingredients except oil until blended. Microwave covered for 4
minutes on medium power or until mixture is well softened. Stir in oil. If
sauce is too thick, thin with water. Serve warm or at room temperature
with crisp cooked vegetables or broiled chicken, or as a sauce for satay (
grilled skewered meat, poultry or fish). Makes 1One fourth cups. 366 calories
