Recipe - Peanut Muffins

1 One half cup Allpurpose flour
One fourth cup Sugar
1 tablespoon Baking powder
One fourth teaspoon Salt
2 Eggs; lightly beaten
L/2 cup butter or margarine;
melted
L/2 cup milk
Three fourths cup Chopped unsalted dry roasted
peanuts.
This was in the Taste of Home Cookbook.
In a large bowl, combine flour, sugar, baking powder and salt. . Combine
eggs, butter and milk, add to the dry ingredients and stir just until
moistened. Fold in the peanuts. Fill greased or paperlined muffin cups
twothirds full. Bake at 400 for 15 minutes or until muffins test done.
Yield one dozen.
