Recipe - Peanut Butter Banana Bread (Quick Bread)

1 Three fourths cup Flour
2 teaspoon Baking powder
One half teaspoon Baking soda
One half teaspoon Salt
1/3 cup Vegetable shortening or
margarine. (not low fat
margarine)
Three fourths cup Chunky peanut butter
2/3 cup Sugar
2 Eggs
1 cup Mashed banana
Preheat oven to 350 degrees. Combine dry ingredients and sift together.
Cream peanut butter, shortening, sugar and eggs and beat well in large
mixing bowl. Add banana pulp. Mix in dry ingredients. Mix well, but do not
beat. Pour batter in to a wellgreased loaf pan and bake for 1 hour or
until tests done. Cool before slicing. Makes 1 loaf. Wrap tightly when
