Recipe - Peachy Chicken Salad

Three fourths cup Vidalia onion, chopped
One fourth cup Vegetable oil
One fourth cup Honey
Tbs.. red wine vinegar
1 cup Chicken breast, cooked,
cubed
1 cup Peaches, chopped
One half cup Seedless grapes
One half cup Pecans, chopped
2 tablespoon Fresh parsley, chopped
One fourth teaspoon Pepper
1/8 teaspoon Salt
Combine first four ingredients in a sauce pan; bring to a boil and set
aside to cool. Combine all other ingredients .Pour cooled liquid mixture
over chicken and peach mixture. Cover and chill for 12 hours. Spoon over
lettuce lined platter and serve. Serves 4.
