Recipe - Peaches In Honey Vanilla Syrup

One fourth cup Water
One fourth cup Honey
1 2" Vanilla Bean
4 lg Peaches ( or nectarines),
Pitted, pealed,and thickly
Sliced
1 tablespoon Lemon juice
1 pt Vanilla nonfat yogurt
Bring water, honey, and vanilla bean to boil; reduce heat and simmer 5
minutes. Add peaches; raise heat to bring mixture back to a fast
simmer. Simmer until peahes are just softened, 1015 minutes,
depending on ripeness. Remove from heat; stir in lemon juice.
Refrigerate at least 2 hours. Serve over frozen yogurt.
