Recipe - Peach Melba Bread Pudding

16 ounce Peach halves in juice
4 cup Bread cubes
One half cup Raisins
1 One fourth cup Skim milk
1 cup Egg Beaters® 99% egg
substitute
One half cup Sugar
2 tablespoon Margarine; melted
1 teaspoon Vanilla extract
One fourth teaspoon Cinnamon
One half cup Raspberry jam; warmed
Drain peaches & reserve One fourth cup juice. Chop peaches.
In a greased 13 x 9 baking dish, combine bread cubes, raisins & chopped
peaches.
Blend milk, Egg Beaters, sugar, margarine, vanilla, cinnamon & reserved
peach juice. Pour over bread mixture. Bake at 350F for 4550 minutes or
until knife inserted in the center comes out clean.
Serve pudding warm & topped with warmed raspberry jam. (Raspberry syrup can
be substituted for the jam).
