Recipe - Peach Coconut Salsa

4 Ripe peaches chopped
coarsely
1 md Onion finely chopped
One fourth cup Olive oil
1 Jalapeno or habanero pepper
chopped finely
1 tablespoon Garlic finely chopped
One fourth cup Chopped cilantro
2 tablespoon Fresh ginger finely chopped
1 Lime ; juice of
One half cup Shredded coconut
Saute the onions and garlic in the olive oil until onions are opaque. Add
remaining ingredients and heat through careful not to overcook.
