Recipe - Paw-Paw With Far Eastern Stuffing

2 ounce Butter
1 Onion; finely chopped
1 Garlic clove; crushed
2 ounce Blanched almonds; roughly
chopped
2 ounce Longgrain rice
2 ounce Seedless raisins
2 Ounces; noneedtosoak
; dried apricots,, chopped
One fourth teaspoon Ground cinnamon
Salt and freshly ground
black pepper
2 Pawpaws; halved and
; deseeded
1. Melt 25g (1oz) of the butter in a saucepan and add the onion and garlic
and fry gently for 5 minutes until softened.
2. Add the almonds and rice and stirfry for 23 minutes until the rice
begins to swell.
3. Add 150ml (One fourth pint) water, bring to the boil, cover and simmer for 15
minutes, stirring occasionally.
4. Add the remaining butter, the raisins, apricots and cinnamon and season
to taste. Fill each half of the pawpaw with the stuffing and serve.

NOTES : The delicious fragrant fruit of Africa and the Far East is the
perfect compliment to a nutty stuffing. Pawpaw is also fabulous served
simply with a little lime juice and can also be baked.
