Recipe - Pattis Fresh Fruit Pizza

1 pack Refrigerator sugar cookie
Dough
8 ounce Cream cheese softened
(use lowfat if you like)
1/3 cup Sugar
2 tablespoon Milk
1 tablespoon Orange rind
1 teaspoon Vanilla
3 Red Delicious apples
Cored and cut or sliced up
Do not peel
2 Bananas
1 cup Pineapple chunks, drained
Save juice
10 Fresh strawberries
(I've used red seedles
Grapes either
Leave whole or cut in half)
GLAZE:
One half cup Sugar
1 tablespoon Cornstarch
One fourth teaspoon Salt
One half cup Orange juice
One fourth cup Water
1 tablespoon Lemon juice
1 tablespoon Lemon rind
Divide cookie dough in half. Place One half softened cookie dough in each of two
9" greased pie pans. Spread with fingers up sides of buttered pans. Prick
bottom and sides with fork and bake 1012 minutes at 350. Cool Mix
softened cream cheese with sugar, milk, and orange rind. Spread this over
the cooled crusts. Core and slice unpeeled apples which have been dipped
in the pineapple juice. Arrange over the cream cheese mixture. Slice
bananas and strawberries and arrange on top of apples. Place the pineapple
chunks on top of pizza. To make the glaze, in a saucepan mix together
sugar, cornstarch, and salt. Gradually pour in juice and water. Add lemon
rind. Bring mixture to a boil and cook 1 minute. Cool. Drizzle glaze over
fruit and chill. Cut into wedge shaped pieces. 1215 servings
