Recipe - Patatas Bravas (Spicy Potato)

2 Dried red chillies
400 g Potatoes; cut or sliced up into large
; wedges, skinson
1 Spanish onion; peeled and
minced
6 Cloves garlic
1 teaspoon Cumin seeds
4 fl Olive oil
Pound the ingredients in a pestle and mortar or electric processor until a
smooth paste and spread it on the potato wedges.
Bake in a hot oven (200C/400F/gas 6) for 45 minutes until the centre of the
potato wedges are done but not crumbly and falling apart.
