Recipe - Pasta Frittata With Ham

Ingredients:

4 ounce Angel hair pasta OR: 2 cups
cooked pasta
1 cup Onion; finely chopped
1 teaspoon Garlic; finely chopped
6 sl (6 oz) lowfat delistyle
ham; chopped
4 Eggs
4 Egg whites
One half cup Partskim Mozzarella cheese;
shredded
Three fourths cup Parmesan cheese; grated
2 tablespoon Parsley; chopped
1 teaspoon Italian Seasoning
One fourth teaspoon Salt
1 pn Ground hot red pepper

Makes : 4 servings at $1.12 each. Prep: 5 minutes. Cook: 10 minutes. Bake:
at 450° for 10 minutes.

1. Heat oven to 450F. Cook pasta according to directions. Drain.

2. Meanwhile, coat large nonstick skillet with ovenproof handle with
nonstick cooking spray. Add onion; cook over medium heat for 5 minutes. Add
garlic; cook 1 minute. Add ham; cook 1 minute. Set aside.

3. Lightly beat eggs, egg whites, mozzarella, Parmesan, parsley, Italian
seasoning, salt and red pepper in mediumsize bowl. Stir in drained pasta
and ham mixture from skillet.

4. Recoat same skillet with nonstick spray. Pour egg mixture into skillet;
cook over medium heat 3 minutes. Transfer skillet to oven.

5. Bake in 450° oven 10 minutes or until top is set. Let stand 5 minutes
before cutting. Serve warm.

Nutrient Value Per Serving: 336 calories, 12 g fat (5 g saturated), 28 g
protein, 29 g carbohydrate, 982 mg sodium, 247 mg cholesterol. Source:
