Recipe - Pasta Chips

2 cup Leftover pasta; unsauced
2 tablespoon Oil
One half cup Leftover caponata; (see
CL9295, 3/16)
One half cup Grated mozzarella
1 Cooked sausage
In a 10inch nonstick skillet heat 2 tablespoons oil. Add enough cooked
pasta to make a thin cake in the skillet. Cook until crusty and golden
brown on the bottom, pressing lightly, 20 to 25 minutes. Flip and brown on
the other side 10 minutes more. Top with caponata, grated mozzarella and
cut or sliced up sausage. Cover and heat through another 3 minutes or until cheese is
melted.
Yield: 2
