Recipe - Passover Low-Fat Granola

3 cup Matzo farfel
One half cup Shredded coconut
One half cup Chopped nuts (your choice)
One fourth cup Oil
1/3 cup Sugar or other sweetener
One fourth teaspoon Salt
1 teaspoon Cinnamon
Grated orange peel to taste
1 cup Raisins or other chopped
dried fruit

Preheat oven to 350 degrees. Combine farfel, coconut and nuts in a large
bowl. Spread onto nonstick cookie sheet. Bake 20 minutes, tossing several
times.
Meanwhile, in a twoquart saucepan combineoil, sweetener and salt. Simmer,
stirring constantly. Add farfelmixture. Stir till coated evenly. Add
cinnamon and grated orange peel. Spread onto nonstick cookie sheet. Bake
20 minutes, stirring frequently till brown. Remove and cool. Add raisins.
Break up any large chunks with spatula. Stor ein closed container in the
refrigerator until served. Makes 12 servings.
Per serving: calories 217, fat 9 grams, protein 2 grams, carbohydrates 35
grams.
