Recipe - Passover Honey Cake

1 cup Honey
One fourth cup Orange juice
Grated rind of 1 orange
3 Eggs, separated
1 teaspoon Vegetable oil
One half cup Sugar
One half teaspoon Ginger
1 Three fourths cup Matzo meal
One half teaspoon Salt
1 teaspoon Coffee; instant
1 teaspoon Cinnamon
One fourth teaspoon Cloves
Heat honey to boil; add orange juice and rind. Cool. Beat egg yolks. Add
oil and sugar, sift together matzo meal and dry ingredients. Add dry
ingredients and honey to egg yolks. Fold in stiffly beaten egg whites. Bake
in one oblong or 2 loaf pans. Line pan with wax paper. Bake @ 300 degrees
for 50 minutes.
