Recipe - Passover Apple Cake

3 Eggs
1 cup Sugar
1 cup Matzo cake meal
1 teaspoon Potato starch
4 Apples; peeled and cut or sliced up
1/3 cup Sugar
2 teaspoon Cinnamon
One half cup Oil
Toss apples with 1/3 cup sugar and cinnamon. Set aside.
Beat eggs, sugar and oil. Blend in dry ings. Put Three fourths of the batter in a
greased 9" square pan. Arrange apples over. Top with rema ining batter.
Bake 5060 min. at 350F.
