Recipe - Parsley Puree

2 Garlic cloves; peeled
One half teaspoon Maldon salt
15 g Fresh flatleaf parsley;
stalks discarded
4 tablespoon Freshly grated Parmesan
4 tablespoon Extra virgin olive oil
One half Lemon; squeeze of
Maldon salt and freshly
ground black
; pepper
Place the garlic, salt, parsley and Parmesan in a mini blender and whizz to
a puree. Add the olive oil and lemon juice and blend again briefly. Season
to taste, cover tightly and chill until ready to serve.
