Recipe - Parris Peanut Brittle

2 cup Sugar
1 cup Light corn syrup
One half cup Water
One half teaspoon Salt
3 cup Peanuts; raw, shelled, skins
off if possible
2 tablespoon Butter
2 teaspoon Baking soda
In a large, heavy saucepan heat the water, syrup, sugar and salt to
boiling. Add peanuts, reduce heat to medium, and, stirring constantly, cook
to hardcrack stage (293300 F). Add butter, remove from heat and add
baking soda. At this point the mixture will foam up considerably, so be
careful. Stirring rapidly, pour onto a nonstick baking sheet (or a marble
slab), spreading to One fourth inch thickness. When cool, break in to pieces;
store in an airtight container. Entered 14 DEC 94 NOTES
: This is very similar to the peanut brittle made by Billie Bob Murphey's
mother, Money Jones.
