Recipe - Parmesan Potato Casserole

12 Med. potatoes, peeled and
quartered
One half cup Butter
1 cup Milk
3 lg Eggs, lightly beaten
One half cup Grated Parmesan
One fourth cup Chopped parsley
1 teaspoon Salt
One half teaspoon Pepper
Heat oven to 350 degrees. Lightly grease a shallow 3 qt. baking dish.
Cook potatoes in water to cover 1520 min. until tender. Drain well and
return potatoes to pot.
Add butter to potatoes and mash until butter melts. Add milk, eggs, cheese,
parsley, salt and pepper and mash until smooth. Spoon into prepared dish.
At this point, it can be refrigerated. Bring to room temp. before baking.
Bake uncovered 4550 minutes until puffed and golden.
Makes about 12 servings. Per serving: 204 cal, 6 g pro, 22 g car, 11 g
