Recipe - Papaya And Crab Salad

1 pound Imitation crab, chopped into
bitesized pieces
1 Ripe papaya
1 Red bell pepper
1 Cucumber, split lengthwise
and cut or sliced up into half
circles
2 Scallions, thinly cut or sliced up
3 cup Fresh spinach, thoroughly
washed, stems removed and
torn into bitesized pieces
One half cup Pine nuts, toasted at 350
degrees until golden, about
15 minutes
DRESSING
2 Limes, Juice of, strained
1 teaspoon Lemon soy sauce (but any soy
sauce will do)
4 tablespoon Corn oil
2 teaspoon Freshly grated ginger
One fourth teaspoon Freshly ground black pepper.

Peel and seed the papaya. Cut it into 1/2inch cubes. Seed the bell pepper,
remove the ribs, and cut the pepper into 1/2" cubes. In a small mixing
bowl, combine all of the dressing ingredients and whisk. Place all of the
salad ingredients in a large mixing bowl and pour the dressing over them
just before serving. Toss to combine.
Yield: Made 8 servings.
Note: This tastes great the first day, but does not hold well.
