Recipe - Papaya Mango And Pineapple Relish

One half cup Papaya; cut into small cubes
One half cup Mango; cut into small cubes
One half cup Pineapple; cut into small
cubes
1 tablespoon Mint leaves; chopped fine
2 tablespoon Cilantro; chopped fine
1 tablespoon Apple cider vinegar
1 teaspoon Extravirgin olive oil
4 Beautiful dill leaves for
decoration, (4 to 5)
(optional)
Salt and pepper to taste*
Toss gently and serve with the Salmon and Scallop Cakes. (see separate
recipe)
