Recipe - Papaya Avocado Salsa (Hl)

2 tablespoon Fresh lemon juice
One half teaspoon Salt
One fourth teaspoon Cumin
One half cup Sweet onion, small cubed
One half cup Yellow pepper, small cubed
One half cup Papaya, small cubed
One half cup Avocado, small cubed
2 tablespoon Chopped cilantro
Mix first three ingredients in a large bowl. Cube the vegetables and fruits
in small cubes. Twist and chop the cilantro. Add remaining ingredients to
lemon, salt and cumin mixture. Mix entire recipe. Serve over fish and
chicken or with lowfat chips.
Yield: 2 cups, 4 1/3 cup servings
Nutritional Information: 45 Calories, 1 gram of fat, high sources of
Vitamin A found in papaya and avocado.
