Recipe - Papaya-Yogurt Mold

3 ounce Orange flavored gelatin
1 One fourth cup Water
1 cup Orange yogurt
One half teaspoon Lime rind grated
2 tablespoon Lime juice
1 small Papaya peeled and minced
One half cup Seedless grapes halved
One fourth cup Toasted almonds slivered
Boston lettuce
1. In a large bowl mix gelatin and boiling water, stirring until gelatin
dissolves. Add yogurt, mixing until smooth and well combined. Mix in lime
rind.
2. Refrigerate until mixture is almost firm. Meanwhile, mix lime juice and
papaya and set aside.
3. Beat gelatin mixture with electric mixer until fluffy. Fold in papaya
mixture, grapes, and almonds. Place in a 4 One half to 5cup mold and
refrigerate until firm (3 to 4 hours).
4. Unmold and serve on a lettuce lined plate.
