Recipe - Papaya-Kiwi Vinaigrette

3 Ripe kiwi fruits; peeled and
minced
1 lg Ripe papaya
Peeled; seeded and minced
1/3 cup Canola oil
One fourth cup Apple cider vinegar
1 tablespoon Honey
One half teaspoon Ground white pepper
One half teaspoon Salt
MAKES 2 CUPS VEGAN/HONEY
This unique dressing combines the natural sweetness of tropical fruits with
the savory tanginess of vinegar. Serve it over mixed leafy greens, mesclun,
or braised or grilled vegetables.
In food processor or blender, combine all ingredients and process until
smooth. Pour dressing into a serving container. Cover and refrigerate until
ready to use.
