Recipe - Pan-Fried Sage Potatoes

Oil for deepfrying
150 g Salmon fillet
1 tablespoon Sunflower oil
Knob of butter
50 g Rocket leaves
Salt and freshly ground
black pepper
1 Heat the oil for deepfrying. Season the salmon fillet. Heat a frying
pan, melt the butter and add the oil.
2 Fry the salmon for two minutes on each side or until just cooked through.
Deepfry the rocket for 12 minutes until crisp.
3 Drain well on kitchen paper. Serve the salmon on a bed of the rocket.
