Recipe - Pan-Fried Onion Fish

Ingredients:

PORK CHOPS
4 Loin pork chops; 1 inch
thick
Salt and freshground
pepper; to taste
4 tablespoon Unsalted butter
1 tablespoon Olive oil

APPLESAUCE
12 Tart apples; peeled and
chopped
One half cup Water
1 Lemon; zest only
1 tablespoon Honey
2 teaspoon Cinnamon
1 teaspoon Fresh ground nutmeg

How to Prepare the Pork Chops:

1. Season the pork chops on both sides with salt and pepper.

2. Heat the butter and olive oil in a 12inch castiron skillet; place the
pork chops in and saut‚ until golden brown on one side, about 5 minutes.

3. Turn the chops over and continue cooking another 5 minutes or until
done. Remove and keep warm.

How to Prepare the Applesauce:

1. Put the apples and water in a heavybottomed saucepan, cover and cook
over medium heat until the apples are soft, 1520 minutes.

2. Mash apples with a heavy spoon, leaving some lumps. Stir in the zest,
honey, cinnamon and nutmeg.
