Recipe - Ozor Na Szaro (Beef Tongue)

4 pound Beef tongue
Onion
5 x Peppercorns
3 qt Water
2 x Bay leaves
SAUCE
3 teaspoon Sugar, granulated
1 tablespoon Butter, unsalted
2 cup Broth from boiling tongue
1 teaspoon Vinegar
One half teaspoon Lemon rind
One half cup Almonds, blanched; chopped
3 teaspoon Water
1 tablespoon Flour, all purpose
2 teaspoon Lemon juice
One half cup Raisins
Boil tongue with other ingredients until tender, about 2 hours. Cool.
Remove outside skin and roots. Slice thin. Save broth. Make Sauce.
Sauce: Carmelize the sugar and water. Add butter,flour and broth and boil
to the bubbling stage. Add remaining ingredients. Add cut or sliced up tongue and
bring to a boil.
