16 pound BEEF CORNED FZ
6 One fourth pound CHEESE MOZZARELLA
2 pound BUTTER PRINT SURE
1 qt SAUERKRAUT #10
200 sl BREAD CH 7 GRAIN #83
4 1/8 pound THOUSAND DRESSING
PAN: 18 BY 26INCH SHEET PAN TEMPERATURE: 450 F. OVEN
1. SLICE CORNED BEEF INTO THIN SLICES, 10 TO 25 PER POUND.
2. PREPARE One half RECIPE FOR THOUSAND ISLAND DRESSING (RECIPE NO. M07000).
3. SPREAD EACH SLICE OF BREAD WITH THOUSAND ISLAND DRESSING.
4. PLACE 3 TO 4 SLICES OF CORNED BEEF ON 1 SLICE BREAD, 2 TBSP
SAUERKRAUT, 1
SLICE CHEESE; TOP WITH SECOND SLICE OF BREAD.
5. ARRANGE SANDWICHES ON SHEET PANS (18 BY 26 INCHES). TOASTING IN A 450
F.
OVEN 10 MINUTES OR UNTIL LIGHTLY BROWNED.
6. CUT EACH SANDWICH IN HALF. SERVE HOT.
NOTE: 1. IN STEP 1, 24 LB CORNED BEEF WILL YIELD ABOUT 16 LB COOKED
CORNED
BEEF.
NOTE: 2. IN STEP 3, 4 LB (2 QT) PREPARED, READYTOUSE THOUSAND ISLAND
DRESSING MAY BE USED.
