Recipe - Oven Roasted Chili Salmon On Spinach-Onion Fondue

2 lg Red onions; cut or sliced up
2 cup Spinach; cut or sliced up
4 lg Banana leaves; parchment
paper and/or aluminum foil
3 cup Cooked jasmine rice
8 3ounce pieces of salmon
fillet, cut or sliced up on the bias
Chili paste; recipe to
follow
1 bn Scallions; chopped
Preheat the oven to 350 degrees. In a large saute pan, cook the onions
until caramelized. Remove the pan from the heat and add the spinach. Taste
for seasoning. Lay a banana leaf out and fold in half. Place a small mound
of rice on the leaf and top with the vegetable mixture. Place a serving of
salmon on top of vegetables and smother the paste over the salmon. Bake for
20 minutes. Garnish with the chopped scallions.
Yield: 4 servings
