Recipe - Oven Pot Roast With Beer

4 pound Chuck roast * see note
Yellow onion cut or sliced up
2 Celery stalks chopped
One fourth cup Green peppers chopped
1/3 cup Water
One half cup Chili sauce
One fourth teaspoon Black pepper
One half teaspoon Salt
12 ounce Beer
* Use a chuck roast or similar cut.
Place roast in large ovenproof pan with lid. Mix the remaining ingredients
except beer and pour evenly over roast. Roast uncovered in 350degree oven
for 1 hour. Pour room temperature beer over, COVER, and cook for 23 hours
longer depending on the thickness of the roast. Thicken liquid with flour
if you wish.
