Oven Baked Eggplant recipe makes 6 Servings
Eggplant
Italian dressing
Breadcrumbs
peel and slice eggplant. dip in italian dressing (even fat free works).
coat well in breadcrumbs.
Spray a cookie sheet with Pam, place eggplant slices on sheet, bake at 425
degrees for 20 minutes, turning once.
