Recipe - Oven-Dried Apple Crisp With Chicken Salad

1 pt Cherry tomatoes; halved
lengthwise
3 tablespoon Extravirgin olive oil
One half teaspoon Salt
1/8 teaspoon Freshly ground pepper
Heat oven to 250 degrees (on the TV show, Martha recommended a temperature
of 150 degrees or the lowest setting on your oven). Line a baking sheet
with parchment paper. Place the tomatoes in a mixing bowl with 3
tablespoons olive oil, 1 tablespoon vinegar, One half teaspoon salt, and 1/8
teaspoon pepper, and toss to coat. Spread the tomatoes, cutside up on the
prepared pan, and bake until soft, wrinkled, and starting to dry but still
juicy, about 1 hour. Remove from oven, and set aside to cool. Makes 1 pint.
