Recipe - Outdoor Grilled Vegetables

1/3 cup Soy flour
1/3 cup Brown sugar
1/3 cup Cornmeal
1 cup Flour; wholegrain wheat, OR
triticale
One fourth cup Wheat germ
Three fourths teaspoon Salt
1 cup Almonds; ground
1 teaspoon Baking soda
2 lg Eggs; beaten
1 cup Plain lowfat yogurt
1 teaspoon Vanilla
1/3 cup Oil
Zest of 1 large orange
One half cup Raisins OR currants
One half cup Dried apricots; minced
Mix dry ingredients and dried fruit together in a large bowl.
Combine wet ingredients and stir into dry ingredients just until moistened.
Batter should be lumpy.
Fill oiled or paperlined muffin tins 2/3 full. Bake in preheated 350° F
oven for 25 minutes.
Makes 12 muffins.
