Recipe - Orzo And Walnut Alfredo

1 tablespoon Butter
One half cup Chopped walnuts
1 One half ounce Parmesan cheese; (grated=1/3
cup)
One half pound Orzo
One half cup Heavy cream
One fourth teaspoon Salt
One half teaspoon Pepper
One fourth cup Snipped chives or scallion
tops
Melt the butter in a small saucepan. Add the walnuts and cook until lightly
browned, about 1 minute. Grate the cheese. Cook the orzo in boiling salted
water until just done, about 5 minutes, and drain. Return the orzo to the
pan and stir in the cream, cheese, salt and pepper. Add the walnuts and
chives and serve at once.
Makes 4 servings
