Recipe - Orzo And Spinach Stuffing

1 cup Orzo pasta
6 ounce Smoked turkey breast cut
In 1/4" cubes
One half cup Green onions thinly
Sliced
One fourth cup Red cabbage finely
Shredded
One fourth cup Fresh cilantro, chopped and
Loosely packed
3 tablespoon Lemon juice
2 tablespoon Regular or lowfat
Mayonnaise
2 teaspoon Olive oil

Cook the orzo according to the package directions, but without adding the
salt. Drain, then rinse with cold water and drain again.

In a large bowl, combine the orzo, turkey, onions, cabbage and cilantro. In
a small bowl, stir together the lemon juice, mayonnaise and oil. Add to
the orzo mixture and toss until well coated. Recipe By
