Recipe - Orange Salsa

2 lg (Florida) oranges, peeled,
Pith removed and minced
1 One half c)
1 lg Tomato, seeded and minced
(1c)
1/3 cup Minced red onion
1 teaspoon Grated orange peel
1 teaspoon Minced garlic
1 teaspoon Minced ginger root
One half Jalapeno chili pepper,
Minced fine (2t)
One fourth teaspoon Salt
1 tablespoon Fresh cilantro, or
Coriander
In a bowl combine all ingredients except the cilantro and chill, covered,
until ready to serve. Before serving, stir in the cilantro.
