2 pound Orange Roughy Fillets
2 tablespoon Lemon Juice, Divided
16 ounce Can Stewed Tomatoes, cut
One half teaspoon Mixed Italian Herbs
1 cup Celery; minced
1 cup Onion; chopped
1 cup Bell Pepper
1 cup Mushrooms; cut or sliced up
One fourth teaspoon Thyme
pn Garlic powder
pn Hot Pepper flakes

Spray a 13x9 Pan with non stick cooking spray and sprinkle with 1 tbls. of
Lemon Juice. Arrange fish in a single layer and sprinkle with 1 tbls.
Lemon Juice. Combine remaining ingredients and spoon over fish. Bake
uncovered in a 350 Degrees oven for 2530 Minutes, until Fish flakes and
sauce is thick.

Serves 4: Each serving Counts 4 proteins, 2 vegetables.
