Recipe - Orange Filling

1 cup Sugar
5 tablespoon Cake Flour
1 ds Salt
One half cup Orange juice
3 tablespoon Lemon juice
One fourth cup Water
1 Egg; well beaten
2 teaspoon Orange rind; grated
2 teaspoon Butter
Combine sugar, flour, and salt in top of double boiler; add fruit juice,
water, and egg, mixing thoroughly. Place over boiling water and cookr 10
minutes, stirring constantly. Add orange rind and
butter. Cool. Makes enough filling to spread between
two 9inch layers (generously), or between three
