Recipe - Orange-Cucumber Relish With Chile Peppers And Mint

3 Navel oranges (peeled),
chopped in bite size
2 small Cucumbers (peeled, halved
lengthwise), cut or sliced up 1/4"
thick
One half Red onion, thinly cut or sliced up
2 tablespoon Vegetable oil
One fourth cup Red wine vinegar
One fourth cup Orange juice
2 teaspoon Red or green chile pepper of
your choice, minced
2 tablespoon Fresh mint, chopped
Salt & freshly cracked black
pepper, to taste
In a mediumsized mixing bowl, combine all the ingredients and mix well.
This relish will keep, covered and refrigerated, 23 days.
NOTES : Try this one with fish.
