Recipe - Onion Soup Au Gratin

1 Loaf french bread
3 tablespoon Butter
2 cup Thinly cut or sliced up onions
One fourth cup Flour
5 cup BEEF STOCK
Salt & pepper
Three fourths cup Grated med cheddar
Three fourths cup Grated swiss
One fourth cup Grated Parmesan
Preheat oven to 325. Cut bread into 1/2" thick slices. Bake 2530
minutes or until dry & lightly browned; set aside. Melt butter in
frying pan; cook onions over low heat, stirring occasionally until
rich golden brown, 30 minutes. Sprinkle flour over onions & cook,
stirring, 2 minutes. Add stock, salt & pepper; simmer 30 minutes.
Transfer to bowls & top with bread. Combine cheeses & sprinkle over
bread. Place under broiler until bubbly & lightly browned.
