Recipe - Onion Relish

2 pound Sweet onions, lg. chopped
2 Celery stalks cut or sliced up
1 Sweet red pepper chopped
1 tablespoon Butter melted
Three fourths cup Vinegar, cider
One fourth cup water
2 tablespoon Brown sugar
1 teaspoon Celery seeds
One fourth teaspoon Salt
Saute cnion, celery, and red pepper in butter in a small Dutch oven 1
minutes or until tender. Add vinegar and remaining ingredients. Bring boil;
reduce heat, and simmer, uncovered, 20 minutes. Store in refrigerator.
Serve chilled or at room temperature. Yield: 1quart
