Recipe - Onion-Mushroom-Bacon Pie

1 pound Mushrooms; cut or sliced up
6 sl Bacon; minced
One half md Onion; cut or sliced up
2 Cloves garlic; minced
2 tablespoon Chopped parsley
3 tablespoon Olive oil
4 Eggs; beaten
1 cup Parmesan cheese
One half teaspoon Salt
One fourth teaspoon Pepper
1 (9 inch) pie shell; unbaked
Saut‚ mushrooms, bacon, onion, garlic and parsley in olive oil until
tender. Drain well and cool. Combine eggs, cheese and seasonings. Stir into
onionbacon mixture. Pour into pie shell and bake for 30 minutes at 350ø.
Yield: 6 to 8 servings.
