Recipe - One-Dish Sausage Jambalaya - Chatelaine

2 Italian sausages; coarsely
chopped
19 ounce Tomatoes; undrained
1 One half cup Longgrain rice; uncooked
1 teaspoon Basil; (or 24 tbsp fresh)
1 Red pepper or zucchini;
chopped
1. In large wide saucepan over medhigh, brown sausages (8 mins) and drain
fat.
2. Add tomatoes, breaking with fork. Stir in 2One half cups water, rice, and
basil. Stir in One half tsp salt. Cover and bring to boil. As soon as mixture
starts to boil, reduce heat to low and simmer for 20 mins, stirring once.
3. Stir in pepper, cover, and simmer 5 mins.
Jazzy Cajun StirIn: Instead of basil, use 1 tsp chili powder, One half tsp each
dry mustard, leaf thyme and garlic powder, and One fourth tsp pepper. Truly
fiery, add One fourth tsp cayenne.
