Recipe - October Cake

2 One fourth cup Unbleached flour
2 Eggs
2 teaspoon Baking powder
One half cup Canned yams, chopped
2 teaspoon Baking soda
2 cup Chopped tart green apples
One fourth teaspoon Allspiced
One half cup Walnuts, chopped
One fourth teaspoon Nutmeg
One half cup Raisins
2/3 cup Pure maple syrup 2 T cream
2 tablespoon Orange marmalade OR
2 tablespoon Grand Marnier
One half cup Butter, softened
Preheat oven to 350 degrees. Sift together flour, baking powder, baking
soda, allspice and nutmeg. Set aside.
In separate bowl, combine maple syrup, butter and eggs, and beat with
electric mixer for 3 minutes. By hand, stir in yams, apples, walnuts,
raisins, cream and marmalade.
Add flour mixture a little at a time, stirring well after each addition;
batter will be stiff. Pour into lightly oiled 9 x 5inch loaf pans. Bake at
350 degrees 6070 minutes. Let cake cool 10 minutes, then turn onto cooling
rack. Let cool completely before slicing.
