Recipe - Ocean Perch Creole

2 pound Ocean perch fillets
One fourth cup Minced onion
3 tablespoon Melted butter
2 tablespoon Flour
1 cn (1 lb) tomatoes
One fourth cup Chopped green pepper
One half teaspoon Salt
Sugar
Pepper
1 Bay leaf
1 Whole clove
Cook onion in butter until tender; blend in flour. Add remaining
ingredients (except fillets) & cook until thick, stirring constantly.
Remove bay leaf & clove. Arrange fillets in well greased shallow
baking dish; cover with sauce. Bake in 350 oven for 2530 minutes.
