Recipe - Oatmeal Raisin Streusel Muffins

One fourth cup Margarine; melted
1 cup 1% milk
One fourth cup Egg Beaters® 99% egg
substitute
2/3 cup Oatmeal; old fashioned
1 1/3 cup Flour
1/3 cup Sugar
1 tablespoon Baking powder
One half teaspoon Salt
One half teaspoon Cinnamon
Three fourths cup Raisins
STREUSEL
3 tablespoon Brown sugar
3 tablespoon Oatmeal; old fashioned
Combine melted butter, milk, egg & 2/3 cup oats. Let stand 10 minutes.
Combine flour, sugar, baking powder, salt & cinnamon. Stir wet ingredients
into dry ingredients just until combined. Fold in raisins. Spoon batter
into 12 greased muffin cups, filling each about Three fourths full. Combine streusel
ingredients & sprinkle over muffins. Bake at 400 F for 20 22 minutes. Per
muffin: 178.8 cal, 4.4 g fat (22.5%), 1 mg chol
NOTES : One egg can be used in place of the egg substitute.
