Recipe - Oatmeal Custard

2 Three fourths cup Water
1 cup Uncooked rolled oats
One half cup Egg substitute, thawed
One fourth cup Sugar
1 1/3 cup Skim milk
One half teaspoon Vanilla extract
1/8 teaspoon Salt
1/3 cup Chopped dried fruit (your
choice)
One half teaspoon Cinnamon
Vegetable cooking spray
Boil water in covered saucepan. Stir in oats. Return to a boil, reduce heat
and continue to boil. Cook, uncovered, for about one minute, stirring
occasionally. Remove from heat. Cover & set aside.
In a large bowl, mix egg substitute, sugar, milk, vanilla & salt. Add
cooked oatmeal, dried fruit and cinnamon to egg mixture & mix well. Pour
into 8inch square pan coated with vegetable cooking spray. Place in larger
pan of hot water. Bake in 350 degree oven for one hour, or until set.
