Recipe - Oatmeal-Raisin Muffins

1 cup Quickcooking oats;uncooked
1 cup Nonfat buttermilk
One fourth cup Plus 2 Tbsp.firmly packed
brown sugar
One fourth cup Unsweetened applesauce
One fourth cup Egg substitute;thawed
3 tablespoon Vegetable oil
1 cup Allpurpose flour
1 teaspoon Baking powder
Three fourths teaspoon Baking soda
One fourth teaspoon Salt
1/3 cup Raisins
Vegetable cooking spray
Combine oats and buttermilk; let stand 1 hour. Add brown sugar and next 3
ingredients to oat mixture,stirring well. Combine flour,baking powder,soda
and salt; add to oat mixture, stirring just until dry ingredients are
moistened. Fold in raisins. Spoon batter into muffin pans coated with
cooking spray, filling threefourths full. Bake at 400*F. for 15 minutes or
until golden. Yield: 1 dozen (148 calories each)
